Elevating Tandoori Chicken with a Pizza Oven Twist: A Flavorful Adventure

Inspired by the similarity between a traditional Indian tandoor and my pizza oven, I embarked on a culinary adventure to create tandoori chicken. The result? A delightful meal that seamlessly blends the smoky flavors of the tandoor with modern cooking techniques. Here’s how I did it, along with some delicious side dishes that perfectly complemented the star of the show.

The Tandoori Chicken Experiment

Tandoori chicken is renowned for its smoky, juicy, and aromatic qualities. To achieve this, I started with a homemade garam masala spice blend. Typical spices included in garam masala are cumin, coriander, cardamom, cloves, cinnamon, and black pepper.

Marination Magic

The key to flavorful tandoori chicken lies in the marination. I marinated chicken thighs in a mixture of yogurt and the garam masala spice blend for 8 hours. This process not only tenderizes the chicken but also infuses it with rich, complex flavors.

Cooking to Perfection

After marinating, I cooked the chicken in the pizza oven for 30 minutes. The high heat and wood-fired aspect of the pizza oven mimic the conditions of a traditional tandoor, resulting in perfectly moist and delicious chicken.

Delectable Side Dishes

To complement the tandoori chicken, I prepared a mustard potato salad and a cilantro cucumber raita inspired by Nigella Lawson. The tangy mustard potato salad and the refreshing raita balanced the smoky flavors of the chicken beautifully.

Grilled Vegetables with Garam Masala

For a touch of added flavor, I used the remaining garam masala and olive oil to season green beans and cherry tomatoes. I blistered them on the grill, creating a vibrant and flavorful side dish that everyone loved.

Reinventing Leftovers: A Tandoori Chicken Salad Niçoise

I cooked extra tandoori chicken to use for dinner the next night. Inspired by Salad Niçoise, I created a version incorporating Indian flavors. The result was a unique and delicious fusion dish that brought new life to the leftovers.

Bonus Recipe: Another Marinade for Your Chicken

As a bonus, I had some overripe peaches that were about to go bad. I decided to make a peach whiskey BBQ sauce. Here’s the recipe:

  • Ingredients:

    1. 5 small peaches, chopped

    2. 1/2 small red onion, chopped

    3. Whiskey

    4. Vinegar

    5. Hot honey

    6. Brown sugar

    7. Worcestershire sauce

    8. Spices

  • Instructions:

    1. Combine all ingredients in a saucepan.

    2. Cook slowly over low heat, stirring occasionally.

    3. Adjust the seasoning to taste.

    4. Blend the mixture until smooth.

This BBQ sauce added a sweet, tangy, and slightly spicy note to our meal, making it a delightful addition.

Cooking tandoori chicken in a pizza oven turned out to be a fantastic idea, bringing out deep, smoky flavors and juicy, tender meat. Paired with flavorful sides and a unique twist on leftovers, this meal was a hit. Try this experiment in your kitchen and elevate your culinary repertoire with these delicious dishes.
